Non rectangular shapes?

Does anyone have a link to a tutorial on how to do non-rectangular type shapes? For example one of the numerous ghost/pumpkin cuffs that don't have filler beads in the background? I have been making them by putting transparent beads in the "empty" spots but it would look so much better if I didn't need to use them.
